There is a certain kind of man who will tell you that the land of old is the sacred land. Whiskey only. No replacement. He usually says this while holding the drink he ordered because Don Draper was the first to order it.
We used to be that guy. then we made one 1800 anejo Instead of bourbon, and suddenly a new dimension to the Old Fashioned emerged that we hadn’t considered.
Same language, different accent
The Old Fashioned is not actually a whiskey drink. It is a spirits-forward drink that has been made with whiskey for most of its life. Sugar, bitter, ice, and something with a backbone. This is the complete recipe. The soul just has to hold on to that moment.

1800 Añejo preserves that moment.
It starts with the blue Weber agave, which takes 8 to 10 years to mature in the highlands of Jalisco. The agave is slow-roasted, then copper-distilled before being aged for more than a year in American and French oak barrels.
This is the same oak that gives bourbon its caramel and vanilla. You’re not asking tequila to replace whiskey. You’re discovering that the same craftsmanship and patience you already respect exists in a spirit you perhaps haven’t discovered.
Where bourbon is heavy and sweet, 1800 Añejo brings agave roasted under oak. It tastes ripe, earthy, slightly salty. Your palate expects one thing and gets something with more corners.
Why It’s the Perfect Winter Drink, Full Stop
It’s a slow drink. You stir it, you don’t stir it, and you sip it while the snow leaves the ground in twenty minutes. It’s designed for cold nights, heavy glass, and nowhere in particular.
Añejo adds another layer of heat. Roasted oak and ripe agave do the same thing as fire. It has a low heat that sits alongside bourbon as a real counterpart, and it goes down just fine when the temperature finally drops below fifteen degrees, and everyone remembers they have a jumper on.
How to Make the Best Old Fashioned You Can This Year
keep it simple. This is a drink that punishes playing.
You will need the following:
- 60 ml 1800 añejo
- 7.5 ml agave syrup (about a tablespoon, and yes, agave to match the agave)
- 2 dashes Angostura Orange Bitters
- 1 large ice cube
- 1 strip of orange peel
Method:
Pour the agave syrup and both bitters into a rocks glass. Add a splash of tequila and stir until the syrup is released and dissolved.
Add a large ice cube. The smaller cubes melt faster and douse the whole thing in water, and you didn’t use good tequila to drink a puddle.
add balance 1800 anejo. Stir gently for about thirty seconds to cool it and bring all the ingredients together.
Take the orange peel, hold it skin side up over the glass and press firmly so that the oil spreads over the entire surface. Wipe it around the rim, pop it in and you’re done.
